Zucchini Lasagna

Well hello again.

I know I’ve mentioned it before that pasta is my jam!! My one true foodie love. This recipe is from one of my favorite YouTube Channels FITMEN COOK Click here.  His food is the best and so easy to make. Here’s what I did last night. Stayed as close to his recipe but tweaked it some. The changes I made to it: Subbed out Turkey for Bison, added in minced garlic, used Organic Marinara, added mushrooms (ran out of fresh ones so I used a can).

Sauce: I used a 1 tsp of Olive Oil. Mixed in 1/4 cup of red onions & 1 tsp of minced garlic. Sauteed that for a couple of minutes. Then added in my Bison, and grounded it up. Seasonings: pink salt, pepper, garlic powder, & Italian seasonings. I used about 2 cups for sauce of Paul Newman’s Organic Marinara. Some have used this brand by “RAO”. Let that simmer on low. Next time I think I’m going to add in some Red Pepper Flakes to give it a little kick.

Noodles: I used 1 Zucchini and sliced in rounds. Now you can sautéed them in a pan to get them softer before you lay them out. I didn’t but have before. Usually the sauce cooks them while baking.

Cheese: I used about 1.5 cups of cottage cheese and actually mixed it until smooth with my mixer. I’ve used it as it comes but decided to do it different last night. Then added in 1/2 cup of mozarella cheese. 1 egg white. Mixed it all together.

I took a 2 quart oblong casserole dish. Laddled some sauce in the pan, then laid out my Zucchini. Added my mushrooms, then my cheese mixture, meat sauce, and repeated the steps. Once I was done, I topped it with the rest of the meat sauce, sliced tomatoes and 1/2 of mozarella cheese. Baked at 350 for 30 minutes.

Quick, easy, and delicious. I made 3 cups worth. So that’s 3 meals for the week either lunch or dinner that you can side it with say a toasted Keto bagel/Keto bread or a low carb bread and a small salad.
